The main activity is the cultivation of ancient grains for the production of high quality stone-ground organic flour.
The initial request was to transform this fine flour into semi-wholemeal pasta, to be offered to big communities such as schools, canteens and hospitals, very interested in offering organic and healthy products.
The requested production plant should have covered both the production of short and long pasta.
At the beginning, we requested and received samples of their flour, to carry out sampling, thus verifying the high quality of the raw material and the final product.
The extremely positive feedback they got from final customers induced Chambettaz to continue with the project, choosing Italpast as a partner, to realize the entire production plant.
The intuition was to propose, for the beginning, a system for short-cut and long nested shape pasta, predisposed, anyway, from the beginning, for the production of long spaghetti-shaped pasta too, to be add in a second moment. This choice allows to start the production immediately, without incurring a too high initial investment, and to add the production of long pasta shapes, such as spaghetti, only after having gained some production experience.
The result is an efficient and automated production process. The success of this collaboration comes from the constant communication with the customer and the foresight of the Chambettaz family. Following a step by step approach, they achieved the desired goal with greater confidence.
Our support and 360° consultancy on the machinery and automation to be implemented in the line were key elements for the creation of a pasta factory able to produceboth short dry pasta and long pasta.
